Antelope French Rack (3-4lbs)

The flavor is milder than beef with a delicate texture much like veal. Be careful not to overcook antelope or the meat will become chewy due to the low fat content which is about one third to one half that of beef. Minimum order is 2 racks. Please call for availability.
